Vegan & Vegetarian Paella recipe. Enjoy your cooking!


Hi everyone! Here is my Vegetarian Paella recipe that suits VEGANS!


Simple ingredients: mushrooms, veggies, rice, vegetable stock, Spanish Paprika, and Saffron.


Ingredients for 2 servings.

๐Ÿš Rice 200g

๐Ÿœ Stock 800ml. If you're cooking with a large pan like me take 1L of stock.

๐Ÿ„ Mushrooms 200-300g

๐ŸŒณ Artichoke 2

โ˜˜๏ธ Flat beans 150-200g

๐Ÿ… Tomatoes 2

๐Ÿง„ Garlic 2 cloves

๐ŸŒธ Saffron 10-15 threats

๐ŸŒถ๏ธ Sweet smoked paprika 1,5 tsp

๐Ÿซ’ Extra virgin olive oil 3 tbsp


For 2 servings use a pan with about 12-13 inches/ 30-33 cm bottom size. Size of pan is important for your rice texture and flavor! Ideally, to make your paella with thin layer of rice. This will gives the best tasting! Also the size of the pan affects the proportion of rice & stock. For example, if you want to cook 4 servings in the same size pan you will need less stock.
