Seafood Paella Stock. The main flavor secret for your paella.
Rich flavorful Seafood stock is the main secret to make your Seafood Paella truly delicious! Heads of monkfish and other fishes, lots of shellfish will enrich your stock with a great flavor and will deliver this beautiful flavor to your final dish: Paella! This stock recipe can be a base for any other great dishes or sauces.
Ingredients for 4-5 pealla servings.
You will regulate amount of stock that you are going to get by adding certain amount of water. The rice : stock proportion depends very much on your pan size, your stove, your rice type, etc. For example: for 2 servings paella take 12 inch (30 cm) bottom pan and use 3/4 of cup (200g) of rice to 3.5 cups (800 ml) of stock.
Seafood and Fish:
๐ฆ๐ฆ ๐ฆhead of monkfish (heads of any WHITE! fishes you have)
๐ฆ๐ฆ๐ฆ prawns, could be just heads and shell of prawns (as many as you have :)
๐ฆ๐ฆ๐ฆ langoustine, could be just claws and shell, (as many as you have :)
๐๐๐ mussels
Vegetables:
๐ 6 big ripe tomatoes
2 heads of garlic
๐ฅ 2-3 carrots
1-2 onions
other vegetables like parsnip, leek, celery, turnip
Spices:
๐ 1-2 dried tomatoes
๐ถ1 dried sweet pepper Nฬora
๐Bay leaf
๐บSaffron
๐ฆ Water (better mineral) to fill your pot.
